I live in a predominantly gluten-free household, so sometimes it can be really difficult to find good recipes for deserts since most of them require expensive substitute flours and ingredients that I don't have.

But! I tried out this really simple gluten-free chocolate chip cookie recipe that worked pretty well! You can also use it if you want a healthier and lower carb alternative to regular chocolate chip cookies.

You'll need:

1/4 cup of melted butter

1/3 cup of peanut butter (you can use another nut butter if you don't like the peanut butter flavor it'll add to it, like almond butter)

1/2 cup of brown sugar

1 egg

1 teaspoon of vanilla

1/2 cup of coconut flour

1/2 teaspoon of baking soda

1/2 a cup of chocolate chips

First, preheat your oven to 350° degrees. Then, mix your ingredients thoroughly. Once your dough has formed, place it on a greased pan (I suggest greasing the pan for this recipe instead of using a cookie sheet so that the cookies bake more evenly.) I made my cookies about 1 1/2 inches, but you can make them bigger, just note that the baking time will be longer. Once your cookies are ready, put them in the oven and bake for about 12 minutes. When you take them out, I suggest letting them cool for at least 5 minutes before consuming them.
